Vegan Grilled Veggie Sandwhich
A vegan substitute for the classic grilled cheese.
This is one of my favorite meals to make! It's super satisfying and delicious.
Oat Nut Bread
Chop up potatoes, mushrooms and carrots and sautée in a pan with olive oil.
After a few minutes add in the chopped asparagus and tomato.
Sprinkle in seasonings as you like.
Put two pieces of bread into the pan with olive oil and cook on medium until desired toastiness is achieved.
Spread avocado on one slice and hummus on the other.
Put the sautéed veggies and spinach between your toast and you have a yummy grilled veggie sandwhich!!
Option to add sliced avocado on top if you're feeling fancy.
